Beautiful thin, soft and delicious dough pancakes with a smooth structure, which will not burn or be heavy. Easy and simple to prepare with a real refreshing taste that they get from yogurt. Sweet or salty version with the filling that suits you best. Cakes that guests and your loved ones will adore.

In a deeper bowl add the eggs, pinch of salt and tsp of honey( or pinch of sugar).
Beat the eggs briefly for about fifteen seconds. Add the yogurt and olive oil and mix again for few seconds. Finally add three tablespoons of flour. Try with two tbsp and add as much as needed, depending on the density of the yogurt and the size of the eggs.
Add vanilla extract at the end and leave them in the fridge for 15 minutes before baking.

Coat the pan with olive oil and collect the excess with kitchen paper.
Bake on medium heat, about one minute, as soon as they are ready on the side, then turn them on the other side and bake shortly about ten seconds.
Be carefully not to burn or bake too much so they will became dry.
Decorate with a filling that suits you. Enjoy!
