Traditional meal as my grandmother and mother were preparing.

Healthy and delicious main meal for whole family can be healthy morning breakfast combined with yogurt or sour milk, or as main meal is amazingly delicious with salad from roasted pepper topped with garlic in vinegar and olive oil, sprinkled with chopped fresh parsley.

Preparation and frying

Clean and wash well one cup of rice with cold water.
It will be perfect if you wash it tree times in cold water. Then start with chopping onion and spinach.

When you are ready add pan with olive oil on low medium heat and start to cook onion.
When pieces became transparent and soft than is perfect time to add cleaned rice.
Frying of rice need to be short or around few minutes is enough time.
Stir to prevent burning of the onion and until every rice grain start to separate.
At the end season with salt and pepper and add cleaned and copped spinach.
Cook the spinach shortly for two minutes and pour tree cups of water. Stir until combine rice and spinach.
Transfer in a baking pan and bake in the oven for 20 minutes on 200 celsius.
At the end crush few eggs on the top and return in the oven for few minutes.
Serve with yogurt or sour milk in the morning as breakfast.
If you decide to prepare as main meal for lunch, I suggest to roasted peppers with garlic and fresh parsley and you will have amazingly delicious and healthy lunch in the spirit of Macedonian tradition.

Beaked bread with butter will give crunchiness and final touch.
