Its gentle creaminess comes from Greek yogurt, which gives it a silky texture and a beautiful, soft yellow hue. At the same time, it’s a wonderful option for a healthy dessert — light, refreshing, and made for true enjoyment 

Ingredients
- 400 grams natural yogurt (Greek or plain, unsweetened)
- 3 tbsp honey (or to taste)
- Juice of 1–2 fresh lemons (about 50–70 ml)
- 1 tsp grated lemon zest (optional, for extra flavor)
- 1 tsp gelatin (or agar-agar for vegan version)
- 2 tbsp water (for gelatin)

Instructions
- Sprinkle gelatin over water in a small bowl and let it bloom for 5 minutes.
- Add the bloomed gelatin to a little warmed (not boiling) lemon juice and stir until fully dissolved.
- In a larger bowl, mix the yogurt with honey and grated lemon zest.
- Pour the lemon juice with dissolved gelatin into the yogurt mixture and stir well until smooth and creamy.
- Divide the mixture into four serving bowls or glasses and refrigerate for at least 2 hours, until set.
- Optional: Garnish with small lemon slices, fresh fruit, or mint leaves before serving.
Tip
This dessert can be stored in the fridge for up to 3 days without losing texture, flavor, or color. It’s a perfect low-calorie, refreshing treat for a hot day.
