If you are looking for a simple recipe that includes pickles to use at the end of the season, this traditional Macedonian recipe may surprise you with its taste.
I believe it came from the practicality of our grandmothers to use leftover food. I first tried it prepared by my father, who made it the same way as his mother.
The sour taste complemented by a few simple spices makes this dish very tasty, stimulating appetite while being filling, and it is nutritious due to the variety of vegetables.

Ingredients:
- 1 jar of pickles
- 3–4 dried peppers (adjust spiciness to taste)
- 1 tbsp spice mix (red pepper, savory, walnuts, salt)
- 2 tbsp olive oil
Tip: You can use a mix of pickles – green tomatoes, melons, embroidered peppers, gherkins, or others to taste.
Preparation:
- Finely chop the pickled vegetables and add them to a pan with olive oil. You can also use lard if preferred.
- Fry over medium heat, stirring occasionally, until the vegetables soften nicely, about 20 minutes.
- Crush dried peppers, add 1 tbsp spice mix, and fry for a few more minutes.
- Serve with pita breads – either fill the pitas or simply scoop from the pan.
Optional: You can prepare this dish with eggs or meat. This simple recipe is also great during fasting.
