Pita breads with a sour taste reminiscent of sourdough, are a great option to fill them with a filling of your choice or to dip with.
They are baked in the oven, opening pockets from the inside, airy and soft at the same time.
You can prepare and use them in combination with different recipes, you can store them in the refrigerator or freeze them. They are much tastier than the many markets you can buy, they do not contain preservatives and other additives.
You can prepare the dough with a mixer or knead it by hand, and in one step shape them before rolling them into small pies.
Ingredients needed for preparation
470 grams of flour
270 ml of lukewarm water
240 ml of yogurt
3 l of olive oil
1 package of dry yeast
1 1/2 tsp of salt
1 tsp of sugar
Preparation and rising of the dough
Add a teaspoon of sugar to the lukewarm water and add the dry yeast. After the yeast has activated after 5 minutes, add the yogurt and olive oil.
Add a teaspoon of salt to the flour, mix and add the dry ingredients to the liquid ingredients. Add the flour gradually. Knead with a mixer for about 10 minutes or by hand, until the dough is soft. Then transfer the dough to an oiled bowl, cover with plastic wrap and let it double or more at room temperature. The required time depending on the room temperature is about 45 minutes to an hour.
Preparation of the pita breads
Transfer the dough to a floured surface, it should be soft, if it is sticky add flour as needed and divide it into 12 equal pieces.
Shape each dough into a ball by pulling the ends inward, and after shaping them all cover them with foil. Let them rise and soften for another 20 minutes. Then, on a floured surface, roll them out into pita breads with a thickness of about 3 millimeters.
Flour the baking pan and bake several pita breads.
Baking the pies
Turn on the oven at 200 degrees and let the pitas bake for 5 to 8 minutes. During baking, pockets will form and become airy. Bake them until they are slightly browned and darken. Depending on the oven in which you are baking them, if necessary, turn the pan and after a few minutes, turn the buns on the other side and take them out briefly. Cover them with plastic wrap to keep them soft. You can fill them with different meats, salads, eggs, etc., they are great for dipping with hummus.
