Ingredients
- 200 g fresh strawberries
- 2 tbsp sugar-free strawberry jam
- 50 g almond flakes
- 3 egg whites
- 1 tsp vanilla extract
- Sugar to taste (optional, for the egg whites)
Preparation
- Prepare the almonds: Lightly toast the almond flakes in a pan over medium heat until golden brown and crunchy. Let them cool.
- Prepare the egg whites: Whisk the egg whites with a little sugar (if using) and vanilla extract until stiff peaks form.
- Poach the meringue dumplings: Shape small dumplings from the whipped egg whites and carefully drop them into simmering water for 2–3 minutes until set. Remove and let them cool slightly.
- Prepare the strawberries: Chop the fresh strawberries and mix them with the sugar-free strawberry jam.
- Assemble the dessert: In a serving dish, layer the strawberry mixture, sprinkle with toasted almond flakes, and top with the poached meringue dumplings.
- Garnish: Optionally, add extra fresh strawberries or almond flakes for decoration.
