Directions
The best way to make creamy hummus, with a really deep flavor and smooth texture, is to prepare the chickpeas at night, let them sit in cold water until the next day. By standing in water, the chickpeas will rise in size nicely and thus shorten the cooking time, the grains will be soft, and by standing in water, they will give additional flavor and retain all the nutrients.
Hummus can be a healthy meal with pita breads and ideal for breakfast, because it is quite nutritious, full of protein that will fill you up, I especially recommend that you prepare the chickpeas at home rather than using ready-made from a can to avoid all the harmful additives.
You can find it in the green markets at a good price, several times lower than the one in the markets, if you are a hummus lover, homemade hummus will also save you money.
Depending on which flavor you want, you can prepare three different variants:
Standard, with boiled beets or spicy.
STANDARD HUMMUS
Wash the chickpeas in cold water several times, three times is best, and leave them in cold water overnight or at least one hour at room temperature before cooking. Do not throw away the water in which the chickpeas are standing, add one tsp of soda bicarbonate and boil in it to retain the nutrients. Soda will help in the smoothness of the hummus and shorten the cooking time of the chickpeas.
Boil it for 60 minutes so that the grains soften nicely. If you let it sit overnight, you will shorten the cooking process from 30 minutes to 45 minutes.
During boiling, remove the foam from the top with a spoon.
When the chickpeas are ready, and when the grains soften nicely, you can press a grain with a spoon and if it is soft and mushy, it means that it is well cooked and you can start preparing the ingredients.
For Standard Hummus you need:
2 cups chickpeas
2 tablespoons of tahini
3 tablespoons of olive oil
2-3 cloves of garlic
1 tablespoon of sea salt
Black pepper to taste
1/2 cup of boiling water in which the chickpeas were cooked.
In a blender, blend all the ingredients together until they are smooth and you get the desired smooth texture. Serve on a plate and decorate with a few grains of boiled chickpeas and fresh parsley, sprinkle with black pepper.
BEETROOT HUMMUS
For this taste, in addition to the ingredients of the standard hummus, add 5 slices of boiled beetroot (1/2 beetroot)
Drain the pieces from the liquid and add them to the blender with the rest of the ingredients.
It will get a nice color from the beetroot. Finally, decorate with sesame seeds and a few grains of boiled chickpeas.
SPICY HUMMUS
For this taste, in addition to the ingredients of the standard hummus, add one red pepper and one red chili pepper, if you are a fan of hot and spicy food and want a stronger taste, you can add two red hot chili peppers.
Blend with the rest of the ingredients and decorate with chili pieces.
