Ingredients
- 1 avocado
- 1/2 pineapple
- 1 red onion
- 200 g red beans (cooked or canned)
- Fresh parsley (about 2–3 tbsp, finely chopped)
- Juice of 1 lemon
- Salt and black pepper to taste
- Black sesame seeds for sprinkling (optional)
- Tortilla chips for serving
Preparation
- Chop the fruit and vegetables
- Dice the pineapple and avocado.
- Finely chop the red onion.
- Mix
- Place the chopped ingredients in a large bowl and pour over the lemon juice.
- Gently mix to avoid mashing the avocado.
- Add beans and parsley
- Add the red beans and finely chopped parsley.
- Carefully fold together with a spoon.
- Season
- Add salt and black pepper to taste.
- Sprinkle with black sesame seeds.
- Serve
- Serve the salad in a bowl of your choice, with tortilla chips on the side or on top for extra crunch.
