Ingredients

  • 1 avocado
  • 1/2 pineapple
  • 1 red onion
  • 200 g red beans (cooked or canned)
  • Fresh parsley (about 2–3 tbsp, finely chopped)
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • Black sesame seeds for sprinkling (optional)
  • Tortilla chips for serving

Preparation

  1. Chop the fruit and vegetables
    • Dice the pineapple and avocado.
    • Finely chop the red onion.
  2. Mix
    • Place the chopped ingredients in a large bowl and pour over the lemon juice.
    • Gently mix to avoid mashing the avocado.
  3. Add beans and parsley
