This bread is not ordinary bread, but a holy Epiphany bread, traditionally prepared only for Epiphany – Vodici.

It is part of the table that marks the day God revealed Himself, and it is kneaded with simple ingredients, silence, and reverence.

It is always made with baking soda, symbolizing purity and modesty.

It is eaten warm, perfectly contrasting with cold jellied meat(piftiya), creating a balance of temperature and flavor.

This is a bread that is not made often, but for a reason.

🧾 Ingredients

  • 500 grams flour (white or wheat)
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons dry yeast or 10 grams fresh yeast
  • 1 teaspoon sugar (for activating the yeast)
  • 220–240 ml lukewarm water or milk
  • 4 tablespoons sour cream or yogurt
  • 2 tablespoons oil (olive or sunflower)

For sprinkling:

  • Chilli flakes
  • Dried thyme

👩‍🍳 Preparation

1. Activating the yeast
In a small cup, mix the lukewarm water (or milk), sugar, and yeast. Let sit for 5–10 minutes until the yeast activates and bubbles appear.

2. Dry ingredients
In a large bowl, mix flour, baking soda, and salt.

3. Wet ingredients
In another bowl, mix sour cream (or yogurt) and oil.

4. Kneading
Add the activated yeast and wet mixture to the dry ingredients.
Knead into a soft, gentle dough, slightly sticky but compact.
👉 Do not over-knead – just enough to combine.

5. Short rise
Cover the dough with a clean cloth and leave at room temperature for 30–40 minutes,
just enough to slightly increase in volume.

6. Shaping and sprinkling
Transfer the dough to a greased baking pan, shape into a circle, and lightly score diamonds on top. Sprinkle with ground beech nuts and thyme for a traditional, earthy, and festive aroma.

7. Baking
Bake in a preheated oven at 180°C (356°F) for 30–35 minutes, until golden brown.
Let rest 5–10 minutes before slicing.

Traditional homemade piftiya, prepared with natural gelatin, slow and quiet like the holiday itself. Served cold, to balance the warm bread and complete the Epiphany table.
