A healthy spring salad that you can prepare in ten minutes, this is lovely tubule salad from the Middle East on my way.
It has a refreshing and slightly sour taste, it is excellent as a side dish to other main dishes as well. To the combination of tomatoes, cucumber and spring onion, fresh mint leaves and parsley, I usually add fresh lemon juice and sumac spice, which give this salad a specific sour-fruity taste.
Sumac has a deep red shade that has many beneficial effects, and is especially good for cholesterol and blood sugar. Sumac spice is obtained from dried berries of the rhus coriaria species and is a frequently used spice in Mediterranean and Middle Eastern cuisine. It is a source of powerful antioxidants, helps with osteoporosis, and reduces muscle pain.
Necessary ingredients
2 tomatoes
1 cucumber
2 spring onions
1 bunch of fresh parsley
1 bunch of fresh mint
150 grams of couscous (prepared)
2 tsp of sumac spice
1 lemon (lemon juice)
2 tsp of olive oil
1/2 tbsp salt
Whole wheat couscous is made from wholemeal durum flour and is rich in micronutrients, dietary fiber and protein. It is prepared in a few minutes in a ratio of one to one. All you need is to add 150 ml of water with a 1/2 tbsp of salt and a teaspoon of olive oil and boil in a pot on the fire. When it boils, add 150 grams of couscous and remove from heat. Cover and set aside while you prepare the vegetables.
The vegetables need to be finely chopped and the cooled couscous is added to them. Depends of flavor you prefer I suggest to add one to two tbs of couscous to taste and the juice of one freshly squeezed lemon.
Mix all ingredients and serve.
Sprinkle with some sumac for decoration and enjoy the refreshing taste of this delicious and healthy spring salad!
