Elderflower jam in small jars can be a perfect gift or a delicious sweet treat.
It can be added to ice cream, pancakes, or other desserts.
The flowers have a unique flavor and strong aroma, and the jam can be preserved for a long time.
From 12 elderflowers, you can get about 450 grams of jam. It’s easy to prepare and will brighten up your summer menu.
Ingredients 
- 12 springs of elderflowers
- 800 ml water
- 500 grams sugar
- fresh juice of 1/2 lemon (can be added earlier for milder flavor)
- zest of one lemon
Preparation 
- Clean the flowers, separate into small blossoms, wash thoroughly and let them drain.
- In a pot, combine water and sugar and heat over medium temperature until sugar dissolves and syrup becomes clear.
- Remove from heat and add the flowers and grated lemon zest. For milder flavor, lemon juice can be added earlier.
- Return to medium heat and bring to a boil, then add juice of half a lemon and simmer 20–30 minutes, stirring occasionally.
- Pour the hot jam into sterile jars and turn the lids upside down until cooled.

This jam is perfect for homemade elderflower ice cream, pancakes, or other desserts.
