Ingredients
For the dough:
- 530 g all-purpose flour
- 300 ml water (cold to lukewarm)
- 1 tablespoon salt
- 2 tablespoons oil
For the filling:
- 500 g ground veal or pork
- 1 small onion
- 1 egg
- 25 g breadcrumbs
- 50 ml milk
- 1 teaspoon salt
- Black pepper to taste
Preparation
- Mix the flour, water, oil, and salt to form a dough. The water should be lukewarm (around 30°C). Knead for 15 minutes until smooth. Brush with oil and let rest, covered with plastic wrap, for at least 1 hour.
- After resting, divide the dough into 5 portions and shape them into balls on a floured surface. Let rest for 10 minutes.
- Roll each ball into a 20–30 cm diameter sheet. Brush both sides with oil, including the edges. Stack the sheets and cover with plastic wrap for 10 minutes.
- Roll the sheets out again as thinly as possible and spread the filling a few centimeters from the edges. Fold the edges and start rolling inward to form a long log. Cut into small pieces – or any size you prefer.
- Grease a baking tray with oil and arrange the manti side by side. Bake at 220°C for about 15 minutes, then reduce the temperature at the end.
- Serve with yogurt, chopped parsley, and mint. They can also be frozen and reheated before serving, keeping the crispiness and taste like fresh.
