Short Description:
Crispy on the outside and creamy on the inside, with a refreshing hint of lemon in every bite. These unique baked potatoes with homemade lemon powder are a healthy dish rich in vitamin C. The lemon powder can be prepared at home without sugar and stored in a jar like other spices. Once you try it, it will quickly become your favorite seasoning for many recipes.
Ingredients:
- 1 kg potatoes
- 2 tbsp olive oil
- 1–2 tsp homemade lemon powder (made from dried lemon peel, no sugar)
- 1 tbsp wine vinegar
- Zest of half a lemon (freshly grated)
- Salt and freshly ground black pepper, to taste
For Homemade Lemon Powder (no sugar):
- 4–5 organic lemons
Preparation:
For the lemon powder:
- Wash the lemons well and cut into thin strips.
- Remove the white bitter part of the peel, keeping only the yellow zest.
- Dry the peels in the sun or in a low-temperature oven (50°C / 120°F) for 2–3 hours until completely dry.
- Grind the dried peels into a fine powder using a blender or spice grinder.
- Store in a clean, dry jar.
For the potatoes:
- Peel the potatoes and boil them in salted water for 15 minutes.
- Drain and let them cool slightly, then cut into wedges.
- Preheat the oven to 200°C / 390°F.
- Place the potato wedges in a baking dish. Add olive oil, wine vinegar, freshly grated zest from half a lemon, salt, and ground black pepper. Toss well so all seasonings are evenly distributed.
- Bake for 35–45 minutes until the potatoes are crispy on the outside and creamy inside.
- Before serving, sprinkle with homemade lemon powder for extra freshness and flavor.
