Watermelon Rind Preserve – A Unique and Irresistible Delight

Don’t throw away your watermelon rind! You can turn it into something truly delicious and unique – a watermelon rind preserve with a touch of chili, poppy seeds, and peppercorns. It’s easy to prepare, mess-free, and doesn’t require changing water or complicated steps.

This preserve is cooked in a simple syrup made from sugar and water. With just a few stirs and minimal effort, you’ll have a flavorful treat that can be stored and enjoyed all year long.


What Makes This Recipe Special?

Ingredients:

  • 700 g watermelon rind (white part only, peeled and diced)
  • 500 g sugar
  • 250 ml water
  • Juice of ½ lemon
  • 1 packet vanilla sugar
  • 2 tablespoons poppy seeds
  • 1 teaspoon chili powder
  • ½ teaspoon peppercorns (black or red)
  • 2–3 fresh lemon balm leaves (optional)

Instructions:

  1. Make the syrup:
    In a pot, bring water and sugar to a boil. Stir occasionally until the syrup becomes clear.
  2. Add flavorings:
    Add vanilla sugar, chili powder, and peppercorns. Let it simmer for 2–3 minutes, then remove the peppercorns.
  3. Add the rind:
    Add the diced watermelon rind to the syrup. Simmer over medium heat for about 50 minutes.
  4. Halfway through cooking:
    After about 25–30 minutes, add the lemon juice and poppy seeds. Stir occasionally (4–5 times is enough).
  5. Finishing touch:
    At the end, add a few fresh lemon balm leaves for extra aroma. Let the preserve cool completely.

How to Sterilize the Jars:

While the preserve is cooking, prepare the jars:

  • Wash them thoroughly and place them in the oven at 100°C (212°F) for 10–15 minutes.
  • Make sure jars don’t touch each other to avoid cracking.
  • Turn off the oven and let them cool inside.
  • Once cooled, fill with the preserve and seal.

Extra Tip:

Perfect with toast and butter, or as a festive treat. Aromatic, slightly spicy, and totally unique – this is a true “gift in a jar”.
