Ingredients
- 2 eggs
- 3 tablespoons flour
- 1 cup yogurt (350 ml)
- 2 tablespoons oil
- a pinch of salt
- vanilla extract

Preparation of the batter
- In a deep bowl, add the eggs and a pinch of salt. Whisk briefly to combine yolks and whites.
- Add the yogurt, oil, and vanilla extract and mix well.
- Add three full tablespoons of flour at the end. You can start with two and add more if needed, depending on the yogurt thickness and egg size.
- Refrigerate the batter for 15 minutes before baking.
- Coat the pan lightly with oil and remove excess with a paper towel.
Baking
- Bake on medium heat for about 2 minutes.
- Once done on one side, flip and bake for another 20 seconds.

Filling suggestion
For a fruity twist, I recommend a simple filling with apricot jam and chopped apricot pieces. Sprinkle with powdered sugar and enjoy this sweet treat!
