Thin and Delicious Yogurt Crepes

Beautiful, thin, soft, and tasty crepes with a smooth batter, easy to bake without burning or sticking.

Simple to prepare, with a refreshing taste from the yogurt.You can make them sweet or savory with a filling of your choice.

These crepes are sure to be adored by your guests and loved ones.

Ingredients

  • 2 eggs
  • 3 tablespoons flour
  • 1 cup yogurt (350 ml)
  • 2 tablespoons oil
  • a pinch of salt
  • vanilla extract

Preparation of the batter

  1. In a deep bowl, add the eggs and a pinch of salt. Whisk briefly to combine yolks and whites.
  2. Add the yogurt, oil, and vanilla extract and mix well.
  3. Add three full tablespoons of flour at the end. You can start with two and add more if needed, depending on the yogurt thickness and egg size.
  4. Refrigerate the batter for 15 minutes before baking.
  5. Coat the pan lightly with oil and remove excess with a paper towel.

Baking

  • Bake on medium heat for about 2 minutes.
  • Once done on one side, flip and bake for another 20 seconds.

Filling suggestion

For a fruity twist, I recommend a simple filling with apricot jam and chopped apricot pieces. Sprinkle with powdered sugar and enjoy this sweet treat!
