Ingredients
- 200 g arugula
- 4 plums
- 1 tbsp honey
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- Pinch of salt and pepper
- 2 tbsp sliced almonds
- 1 tbsp puffed whole grains
- Grated Parmesan (for garnish)
- Zest of ½ lemon
- 2 tbsp lemon juice
Preparation
- Cut the plums into wedges and arrange them over the arugula leaves on a plate.
- Prepare the dressing: mix honey, balsamic vinegar, olive oil, salt, pepper, lemon zest, and juice.
- Drizzle the salad with the dressing.
- Garnish with sliced almonds, puffed grains, and grated Parmesan. Finish with a sprinkle of black pepper.
