Delicious savory pancakes for breakfast, rich in chlorophyll due to the fresh spinach, excellent to start the day in a healthy way and enrich the body with oxygen and beautiful energy from the morning. Only four ingredients are needed, from which fresh spinach, they can be prepared and wrapped in foil and served as breakfast at work, or even better if you have time to enjoy them while they are still warm.
To make them soft, I recommend that you grind the oats in a blender or grinder like flour and then add it with the remaining ingredients.
Necessary ingredients for one meal
1/3 cup oats (ground)
1 egg
3 tablespoons of sour cream or cream cheese
50 grams of fresh spinach (a handful)
Cream cheese or sour cream for topping
Add all the ingredients to a blender and blend until you get a nice and smooth mixture.
Coat the pan with a little olive oil and bake them at a moderate temperature. Be careful not to have a strong fire so they don’t burn. When baked at a medium temperature, they retain their beautiful green color. When they are a little browned on one side, turn them to the other side and bake them for a shorter time.
They are easy to shape when baking because the sour cream or cream cheese make the mixture more stable and thicker, you can shape them with a spoon in the form of circles.
Spread sour cream or cream cheese of your choice on each mini pancake, or you can decorate with a scoop of cream cheese and a fresh spinach leaf.
