Roasted Sweet Potato Salad with Fruit and Soft Cheese🥗🍠

For all sweet potato lovers, I suggest a delicious salad with roasted sweet potato flavored with fruit, arugula, and soft cheese, topped with a dressing that combines all the flavors into an irresistible taste.

Ingredients:

  • 2 pieces of sweet potato
  • 1 green apple (Golden Delicious)
  • 100 g soft white cheese (Danish white or feta)
  • 1 kiwi
  • Arugula
  • Cumin seeds
  • Salt
  • Olive oil

For the dressing:

  • 1 tbsp olive oil
  • 1/2 tbsp ground cumin
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey

Preparation:

  1. Finely chop the sweet potato into small cubes, add a little salt, and 2 tbsp cumin seeds.
  2. Add 2 tbsp olive oil, mix well to coat all the pieces with oil and cumin, and transfer to a baking pan.
  3. Bake at 180°C for 20–30 minutes, depending on the size of the pieces. Mix once during baking for better flavor. Remove when soft.
  4. Cut the kiwi into small cubes, the green apple into quarters, and then each quarter into thin strips. Cut the cheese into cubes.
  5. Serve on a wooden board or deep plate. Add arugula at the bottom, then layer the sweet potato, kiwi, and cheese on top.
  6. Drizzle with the dressing and enjoy the flavors.
