Directions

For all sweet potato lovers, I suggest a delicious salad with roasted sweet potato flavored with fruit, arugula, and soft cheese, topped with a dressing that combines all the flavors into an irresistible taste.
Ingredients:
- 2 pieces of sweet potato
- 1 green apple (Golden Delicious)
- 100 g soft white cheese (Danish white or feta)
- 1 kiwi
- Arugula
- Cumin seeds
- Salt
- Olive oil

For the dressing:
- 1 tbsp olive oil
- 1/2 tbsp ground cumin
- 1 tbsp apple cider vinegar
- 1 tbsp honey
Preparation:
- Finely chop the sweet potato into small cubes, add a little salt, and 2 tbsp cumin seeds.
- Add 2 tbsp olive oil, mix well to coat all the pieces with oil and cumin, and transfer to a baking pan.
- Bake at 180°C for 20–30 minutes, depending on the size of the pieces. Mix once during baking for better flavor. Remove when soft.

- Cut the kiwi into small cubes, the green apple into quarters, and then each quarter into thin strips. Cut the cheese into cubes.
- Serve on a wooden board or deep plate. Add arugula at the bottom, then layer the sweet potato, kiwi, and cheese on top.
- Drizzle with the dressing and enjoy the flavors.
