A silky, tempting garlic dip that boosts immunity, Ohridsko Makalo is a traditional Macedonian recipe from the Ohrid region, also known as garlic mayonnaise.
It is recognizable by its smooth, creamy texture, lovely pearl-white color, and bold, distinctive garlic flavor.
Prepared with patience and only a few simple ingredients, this dip develops a perfectly emulsified structure and an intense aromatic finish.
Ingredients
- 4–5 garlic cloves, finely crushed
- 200 ml olive oil (mild, not too bitter) or sunflower oil
- ½ teaspoon sea salt
- A few drops of fresh lemon juice (about ½ teaspoon)
Preparation
- Peel the garlic cloves and crush them into a smooth paste using a mortar and pestle or a fine grater.
- Add the sea salt to the garlic and mix until fully incorporated.
- Begin adding the olive oil very slowly, drop by drop at first, continuously mixing or whisking in one direction.
- As the mixture starts to thicken and emulsify, you may add the oil in a thin stream, always whisking steadily.
- Once the dip reaches a smooth, creamy, mayonnaise-like consistency, add a few drops of fresh lemon juice to balance the flavor.

- Taste and adjust salt or lemon if needed.
The preparation takes about 25–30 minutes, and patience is key to achieving the perfect silky texture.
Serving suggestion
Ohridsko Makalo pairs beautifully with grilled or fried fish(or I love to served with grilled throat) with beef dishes, chicken or simply spread over roasted or toasted bruschetta for a flavorful breakfast or appetizer with grated truffle.
