Directions
Delicious Tapenade spread or dip is made of black olives, hailing from the Provence region in France. Excellent with toasted bruschetta, as a breakfast or healthy appetizer at any time. It is prepared in two minutes by blending all the ingredients, and you can keep it closed in the refrigerator for several days.
When choosing olives it is best to buy unsalted black olives so that you have more control over the saltiness and flavor you end up with. Apart from black olive spread, you can also find green olive spread.
In the following, I share the spread of several ingredients that I usually add to make it to my taste.
Ingredients
150 grams of unsalted black olives (half a cup)
1 clove of garlic
1/2 lemon juice
zest of half a lemon
2 tablespoons sundried tomatoes into olive oil
1 tablespoon of olive oil
1 tablespoon chopped parsley
1/2 chopped red pepper or chili of choice
1 tbsp capers
oregano and salt to taste
Clean the olives from the bone and chop all the ingredients finely. Then add them in a blender and blend them several times by pulsing until you get a nice mixture, but not puree. You can also use a hand blender.
If you want whole pieces and a more rustic look, you can not blend the spread, but finely chop it into very small pieces. Be careful and check the saltiness several times until you finish.
Serve with toasted olive oil bruschetta and finish with sundried tomatoes or freshly chopped tomatoes with parsley and a sprinkle of oregano.
