Delicious vanilla-flavored donuts, quick and easy to prepare with one kneading the dough and twenty minutes before frying. Nice full structure inside with the filling that you desired.

Preparation

Heat the milk to be lukewarm then add the sugar in it and stir to melt the sugar.
Then add the the fresh yeast into small pieces and leave it for 5 minutes without stirring with the milk.
In a bowl add half of the four (350 grams) and add the milk.
Then mix them together with a spoon.
When ingredients combine you can add 3 beaten egg yolks, 50 grams of oil, a pinch of salt, vanilla extract and the second half of the flour (350 grams), and mix with a spoon to get a nice mixture.
The dough need to be soft and sticky, but if is too much, then you can add 30 to 50 grams of flour more.
Sprinkle the dough with flour and cover with a kitchen towel to rise twice by size at room temperature or about 45 minutes.
Once the dough reaches the size, take it out and knead it for a few minutes (3-4).
Then roll it with a rolling pin to a thickness of 1 cm and with a mold or cup take out the size of donuts you want.
Arrange the donuts in a floured pan and let them rise well for about 20 to 30 minutes depending on the room temperature.

Frying

In a saucepan with a lid, add sunflower oil one kilogram and heat over medium-low heat.
You can check the temperature with a wooden spoon when you dip it in the oil, bubbles will appear around it, or with a small piece of dough.
When you are frying the donuts, you need to fry the top first because is more ripe.
Add a few donuts, but not too much so as not to lower the oil temperature too much.
Then cover with a lid and let them fry for about 2 to 3 minutes.
The lid will help you donuts to grow nicely and form a ring in the middle.
When steam appears on the lid, wipe it off and cover the donuts again.
After turning the donuts, fry them on the other side without a lid and shorter.
Be carefull with the steam from the lid, and wipe until frying all the time it to avoid splashing oil.
Once the donuts are ready, place them on kitchen paper to soak up the excess oil.
Finally you can fill them with filling if desired and sprinkle with powdered sugar.

Pistachio Filling

Grind 100 grams of pistachios in a grinder.
Then mix them with 3 tablespoons of corn starch and put them in 100 grams of milk.
Mix well to get a smooth mixture and place them in a pan over medium heat.
Add 6 cubes of white chocolate, 50 grams of whipping cream and stir constantly.
If necessary, add more milk depending on the density of the filling you want.
