A crispy portion of a pan fried salmon combined with Italian pasta (De Negro), a restaurant-like portion prepared at home in 10 minutes, a healthy and nutritious meal rich in protein, excellent for lunch or dinner.
You can look for Italian pasta de negro in the markets and you can choose always nice pieces of fresh salmon in a fish-markets.

Ingredients for 2 servings
2 pieces of fresh salmon
pasta de negro(Italian black pasta)
2 tbsp of olive oil
1 tbsp of butter
2 tbsp of Parmesan cheese
1/4 onion
2 cloves garlic
1/2 fresh chili (chopped for taste)
black pepper
fresh dill
1 lemon
Preparation
Prepare the salmon pieces in a pan with olive oil. Clean the salmon well from the scales if it is not cleaned, wash it and absorb the excess of water on both sides with kitchen paper. The pieces need to be as dry as possible. Then sprinkle sea salt and black pepper on both sides.
Place the salmon on a high heat to fry on the skin side first or 2 to 4 minutes is enough, depending on the thickness of the piece. If you fry in a copper pan, the piece is ready in a shorter time. The sea salt is added over the surface of the salmon so that it does not stick to the pan.
Be careful, the piece of salmon don’t need to be moved while frying so it doesn’t break, if it’s stuck leave it to fry nicely, because it will just come off the pan after it’s fried nicely and get a darker part on the surface, once is enough to check it from the lower part, if it is ready you can turn on the other side.
Frying depends on the thickness of the salmon, for a thinner slice you need a shorter time. After frying one side, turn it to the other side and fry it for a shorter time than the first side. Each piece should remain juicy in the middle and crispy on the outside.
Leave the pieces prepared in this way in a serving plate and prepare the pasta. Put water with a little sea salt and after it boils, add the spaghetti to cook. The De negro pasta is prepared from durum flour and sepia oil and it is important not to overcook it, but to prepare it al dente. After 2 minutes of boiling, check it, it is enough that it is slightly softened and it bends, then take it off the heat. Have on mind that they will cook for more 1-2 minutes in the pan and will be prefect at the end.
In the same pan where the salmon was fried, add the butter and add finely chopped onion to fry, fry on a medium temperature.
After it becomes transparent, add the finely chopped garlic and fry briefly.
Then add the cooked spaghetti with a little water in which they were cooked and cook until the water evaporates, not more than 2 minutes. At the end, add two tablespoons of parmesan cheese and mix, sprinkle with black pepper and finely chopped fresh chili for a spicy taste as desired.
Serve with a slice of lemon and some fresh dill.
For an additional taste of the salmon, you can prepare a dressing of crushed garlic, fresh dill, a little lemon juice and olive oil.
Pour the sauce over the piece of salmon and enjoy this delicious lunch or dinner!
