Crinkle Lemon Cookies 
These crinkle lemon cookies are quick and easy to make, require no mixer, and bake in just 10–15 minutes.
Light, fragrant, and delicately sweet, they’re perfect when you want a homemade treat in no time 
Preparation Time

Ingredients
- 2 eggs
- 125 ml sunflower oil
- 125 ml yogurt
- 125 g sugar
- 450 g corn flour
- 10 g baking powder
- 1 tablespoon jam of choice (for flavor)
- Zest of 1 lemon
- A pinch of salt
- Powdered sugar (for coating)
Instructions
- In a large bowl, add the eggs and sugar. Whisk until the sugar dissolves.
- Add the yogurt, oil, jam, and lemon zest. Mix until well combined.
The jam is optional — one tablespoon is enough to add a subtle flavor.
- Add the dry ingredients: corn flour, baking powder, and salt.
- Mix with a spatula or by hand until a soft dough forms.
- The dough will be soft and slightly crumbly due to the corn flour — this is normal.
- Cover the dough with plastic wrap and let it rest for 5 minutes.
- Scoop one heaping teaspoon of dough and form small balls.
- Roll each ball in powdered sugar and gently press the center.
- Place the cookies on a baking tray lined with parchment paper.
- Bake in a preheated oven at 200°C (392°F) for 10–15 minutes.
Tips
- Watch closely toward the end of baking, as the cookies brown quickly. Aim for a light golden color.
- For a stronger crinkle effect and more contrast, roll the cookies twice in powdered sugar before baking.
