Crinkle Lemon Cookies 💛

These crinkle lemon cookies are quick and easy to make, require no mixer, and bake in just 10–15 minutes.

Light, fragrant, and delicately sweet, they’re perfect when you want a homemade treat in no time 🙌


🕒 Preparation Time

  • Prep time: 10 minutes
  • Baking time: 10–15 minutes

🧾 Ingredients

  • 2 eggs
  • 125 ml sunflower oil
  • 125 ml yogurt
  • 125 g sugar
  • 450 g corn flour
  • 10 g baking powder
  • 1 tablespoon jam of choice (for flavor)
  • Zest of 1 lemon
  • A pinch of salt
  • Powdered sugar (for coating)

👩‍🍳 Instructions

  1. In a large bowl, add the eggs and sugar. Whisk until the sugar dissolves.
  2. Add the yogurt, oil, jam, and lemon zest. Mix until well combined.

    The jam is optional — one tablespoon is enough to add a subtle flavor.

  3. Add the dry ingredients: corn flour, baking powder, and salt.
  4. Mix with a spatula or by hand until a soft dough forms.
  5. The dough will be soft and slightly crumbly due to the corn flour — this is normal.
  6. Cover the dough with plastic wrap and let it rest for 5 minutes.
  7. Scoop one heaping teaspoon of dough and form small balls.
  8. Roll each ball in powdered sugar and gently press the center.
  9. Place the cookies on a baking tray lined with parchment paper.
  10. Bake in a preheated oven at 200°C (392°F) for 10–15 minutes.

💡 Tips

  • Watch closely toward the end of baking, as the cookies brown quickly. Aim for a light golden color.
  • For a stronger crinkle effect and more contrast, roll the cookies twice in powdered sugar before baking.
