Ingredients 
- 150 g ground almonds
- 30 g melted butter
- 25 g sweetener of choice (erythritol/stevia)
- 250 g cream cheese
- 250 ml heavy cream
- 1 tbsp vanilla extract
- 5–6 fresh strawberries for serving
Preparation 
- In a pan over low heat, combine ground almonds with melted butter and sweetener. Stir for a few minutes until golden brown and fragrant. Let cool completely.
- Using a hand mixer, combine cream cheese and heavy cream for one minute until smooth, then add vanilla extract and mix briefly.
- In serving glasses, layer two tablespoons of almonds at the bottom, then a thin layer of cream cheese and pieces of strawberries. Repeat with another layer of cream cheese and finish with almonds on top.
- Decorate with strawberry halves and fresh mint leaves.
- Chill in the fridge for at least one hour or overnight for the best flavor.
