Ingredients 🍓

  • 150 g ground almonds
  • 30 g melted butter
  • 25 g sweetener of choice (erythritol/stevia)
  • 250 g cream cheese
  • 250 ml heavy cream
  • 1 tbsp vanilla extract
  • 5–6 fresh strawberries for serving

Preparation 🍓

  1. In a pan over low heat, combine ground almonds with melted butter and sweetener. Stir for a few minutes until golden brown and fragrant. Let cool completely.
  2. Using a hand mixer, combine cream cheese and heavy cream for one minute until smooth, then add vanilla extract and mix briefly.
  3. In serving glasses, layer two tablespoons of almonds at the bottom, then a thin layer of cream cheese and pieces of strawberries. Repeat with another layer of cream cheese and finish with almonds on top.
  4. Decorate with strawberry halves and fresh mint leaves.
  5. Chill in the fridge for at least one hour or overnight for the best flavor.
