Directions
This light and airy cake is prepared in just a few minutes using a hand mixer.
The filling is a healthy, refreshing option with reduced sugar and a delicate flavor, made from only two ingredients – freshly blended Japanese persimmons and honey.
After a short chill in the refrigerator, the filling thickens naturally and reaches a pudding-like consistency, making the cake even lighter and more enjoyable.
Ingredients
For the cake:
- 3 eggs
- 200 g all-purpose flour
- 50 g starch
- 150 g sugar (brown or of choice)
- 120 ml freshly squeezed lemon juice
- 90 ml vegetable oil (sunflower)
- 10 g vanilla sugar (1 sachet)
- 10 g baking powder (1 sachet)
For the filling:
- 3 ripe Japanese persimmons
- 2 tablespoons honey
Preparation
Filling:
- Use ripe, soft Japanese persimmons.
- Scoop the flesh out of the skin with a spoon and remove any seeds if present.
- Add the honey and blend with a hand blender:
- blend fully for a smooth, creamy texture, or
- blend briefly if you prefer small fruit pieces
- Refrigerate the filling for 10–15 minutes until it thickens.
Cake:
- In a large bowl, beat the eggs until the whites and yolks are combined.
- Add the sugar and vanilla sugar and mix with a hand mixer for a few minutes, until the sugar dissolves and the mixture becomes light and fluffy.
- Add the lemon juice and vegetable oil and mix briefly.
- Finally, add the flour, starch, and baking powder. Mix until smooth and well combined.
Baking
- Lightly grease a 26 cm (10-inch) baking pan.
- Pour in the batter and bake at 180°C (350°F) for 30–35 minutes.
- After 30 minutes, check with a toothpick – if it comes out clean, the cake is done.
Assembly
- Let the cake cool for about 10 minutes, then remove it from the pan.
- Slice the cake horizontally into two layers.
- Spread the persimmon filling over the bottom layer.
- Place the top layer back on:
- remove the top crust for a more elegant look, or
- keep it for a rustic finish and dust with powdered sugar
