This apricot Swiss roll is a true summer delight for anyone who loves sweet-and-sour desserts.

Ingredients
For the sponge:
- 4 eggs (separated into whites and yolks)
- 100 g sugar
- 100 g cake flour
- 30 ml vegetable oil
- ½ tsp vanilla extract
For the filling:
- 200–250 g apricot jam (optionally add a bit of honey or another jam flavor)
Preparation
- Preheat the oven to 180°C. Line a baking tray with parchment paper.
- Separate the egg whites from yolks. Whip the whites with half of the sugar until stiff. Beat the yolks with the remaining sugar until creamy.
- Gently fold the yolks into the whites, add the vegetable oil and vanilla, then sift in the flour. Fold carefully with a spatula to keep the batter soft and airy.
- Pour the batter onto the parchment and spread evenly, so it’s smooth and flat. Bake 12–15 minutes, until lightly golden.
- Immediately after baking, while the sponge is still warm, carefully remove the parchment.
- Spread the apricot jam evenly.
- Roll up the sponge and let it cool before slicing and serving
