This apricot Swiss roll is a true summer delight for anyone who loves sweet-and-sour desserts.

The sponge is so soft and fluffy that it literally melts in your mouth, leaving a gentle sweet and slightly tangy flavor. Each bite is magical – a tender cake wrapped around a layer of apricot jam makes this dessert irresistible.

🍰 Ingredients

For the sponge:

  • 4 eggs (separated into whites and yolks)
  • 100 g sugar
  • 100 g cake flour
  • 30 ml vegetable oil
  • ½ tsp vanilla extract

For the filling:

  • 200–250 g apricot jam (optionally add a bit of honey or another jam flavor)

🥄 Preparation

  1. Preheat the oven to 180°C. Line a baking tray with parchment paper.
  2. Separate the egg whites from yolks. Whip the whites with half of the sugar until stiff. Beat the yolks with the remaining sugar until creamy.
  3. Gently fold the yolks into the whites, add the vegetable oil and vanilla, then sift in the flour. Fold carefully with a spatula to keep the batter soft and airy.
  4. Pour the batter onto the parchment and spread evenly, so it’s smooth and flat. Bake 12–15 minutes, until lightly golden.
  5. Immediately after baking, while the sponge is still warm, carefully remove the parchment.
  6. Spread the apricot jam evenly.
  7. Roll up the sponge and let it cool before slicing and serving 🍴.
