This fresh seasonal salad is a true explosion of flavors and aromas. The combination of crisp greens, juicy strawberries, and creamy feta cheese creates a perfect balance between sweet and savory. The tahini and honey dressing adds depth and a smooth, velvety texture, while the lemon brings a refreshing citrus note. This salad is ideal as a light lunch, appetizer, or a side dish for spring and summer meals. It is at its best when prepared during strawberry season, when their flavor is at its peak.
Ingredients
For the salad
- 100 g lettuce, torn into pieces
- 100 g baby spinach
- 10–15 fresh celery leaves, finely chopped
- 10 fresh strawberries, halved
- 100 g feta cheese, cubed or crumbled
For the dressing
- 1 tablespoon tahini
- 2 tablespoons honey
- 2 tablespoons freshly squeezed lemon juice
- 8 fresh strawberries
- 1 tablespoon strawberry jam
- 2 tablespoons apple cider vinegar
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon freshly ground black pepper
For garnish
- Grated lemon zest
- 1 tablespoon mixed seeds (poppy seeds, sunflower seeds, chia seeds)
Preparation
- Wash the strawberries and cut them in half. Cut the feta cheese into cubes or gently crumble it by hand.
- In a large bowl, combine the lettuce, baby spinach, and chopped celery leaves, then transfer to a serving plate.
- Evenly arrange the strawberries and feta cheese over the greens.
- Place all the dressing ingredients in a blender and blend until smooth and creamy.
- Drizzle the dressing over the salad just before serving, sprinkle with mixed seeds, and finish with grated zest of half a lemon.
Tip: For a deeper flavor, add a few drops of balsamic glaze or a sprinkle of toasted sesame seeds.
