Homemade Zucchini Chips with Yogurt Dip
The beauty of these homemade zucchini chips lies in their light, healthy flavor—perfect for both kids and adults. Crispy on the outside and tender on the inside, they pair beautifully with a refreshing yogurt dip flavored with fresh herbs, lemon zest, and garlic.
Ingredients (Serves 2–3)
For the zucchini chips
- 1 medium zucchini (250–300 g / 9–10 oz)
- ½ teaspoon salt
- 50 g all-purpose flour (about 4 tablespoons)
- 3 tablespoons olive oil
For the yogurt dip (optional):
- 150 g low-fat yogurt (⅔ cup)
- 1 tablespoon finely chopped fresh parsley
- ½ teaspoon lemon zest
- 1 small garlic clove, finely minced or grated
- A pinch of salt
Instructions
- Slice the zucchini into thin rounds and season both sides with salt. Place them on kitchen paper and let them rest for 15 minutes to release excess moisture.
- Coat each zucchini slice lightly in all-purpose flour, turning to cover both sides evenly.
- Heat the olive oil in a pan over low to medium heat and fry the slices until golden and crispy on both sides.
- Transfer to kitchen paper to absorb any excess oil.
Yogurt Dip
In a small bowl, combine the yogurt, parsley, lemon zest, garlic, and salt. Mix until smooth.
Serve the zucchini chips warm with the refreshing yogurt dip. A simple, wholesome, and delicious snack for the whole family
