Healthy & Delicious Coconut Energy Balls – Two Irresistible Variations!
If you’re looking for a light yet flavorful dessert that fits perfectly into a balanced diet, this recipe is for you! We’re bringing you two variations of healthy coconut energy balls – one with crunchy pistachios in the center, coated in dark chocolate, and the other filled with frozen raspberries wrapped in a creamy coconut layer. Both versions are freezer-friendly and keep their taste and texture beautifully.
Ingredients:
- 1 fresh coconut
- 20 unsalted pistachios
- 20 frozen raspberries
- 150 g dark chocolate (for the chocolate-coated version)
- Additional shredded coconut for coating
Instructions:
- Prepare the mixture:
Clean and chop the fresh coconut into smaller pieces. Add it to a blender along with other ingredients of your choice (such as dates, a bit of honey or maple syrup, coconut oil – optional). Blend until the mixture is smooth and holds together well. - Chill the mixture:
Transfer the blended mixture onto a piece of aluminum foil and place it in the fridge for about 10 minutes. This will make shaping the balls much easier. - Filling and shaping:
Once the mixture is chilled, start forming small balls. In each one, press in a pistachio or a frozen raspberry. Roll the balls in shredded coconut for extra texture. - Chocolate coating (optional):
For the chocolate version, melt 150 g of dark chocolate. Using a fork, dip each ball into the melted chocolate and place it on parchment paper. Let them set for about 10 minutes.
Tips:
- One medium-sized coconut yields around 20 energy balls.
- Store them in the freezer for a longer shelf life and a refreshing treat anytime you crave something sweet!
