The sweet plums pair perfectly with the slightly bitter arugula, while honey and balsamic vinegar give a delightful sweet-and-sour touch.

Sliced almonds and puffed whole grains add crunch, and lemon zest with juice brings a fresh, zesty note.

Ingredients

  • 200 g arugula
  • 4 plums
  • 1 tbsp honey
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Pinch of salt and pepper
  • 2 tbsp sliced almonds
  • 1 tbsp puffed whole grains
  • Grated Parmesan (for garnish)
  • Zest of ½ lemon
  • 2 tbsp lemon juice

Preparation

  1. Cut the plums into wedges and arrange them over the arugula leaves on a plate.
  2. Prepare the dressing: mix honey, balsamic vinegar, olive oil, salt, pepper, lemon zest, and juice.
  3. Drizzle the salad with the dressing.
