You can prepare them as a sweet or salty version with a filling that suits you best. These crepes are definitely the one that your guests and loved ones will adore.
Ingredients:
2 eggs
3 tablespoons of flour
1 cup of yogurt (350ml)
2 tablespoons of oil
a pinch of salt
vanilla extract
PREPARATION OF THE DOUGH
Add the eggs in a bowl, add a pinch of salt and beat the eggs with a whisk for a while to make the yolks and whites combine. Then add the yogurt, oil, vanilla extract and mix the ingredients.
At the end, add three full spoons of flour. Try with two tablespoons and add as needed, depending on the thickness of the yogurt and the size of the eggs.
Leave the dough in the refrigerator for 15 minutes before baking. Coat the pan with oil and collect the excess with kitchen paper.
Bake them at medium heat for about two minutes, as soon as they are done on one side, turn them over and bake them for another twenty seconds.
As a lover of fruit flavors, I recommend a simple filling with apricot jam and chopped apricot pieces, sprinkle with powdered sugar and enjoy this sweet treat.
