Oven Baked Salmon with Mashed Sweet Potatoes can be a quick lunch in ten minutes.
In order to have a good result when preparing salmon, it is best to choose an nice fillet, with the same thickness so that it is evenly cooked, with a juicy interior that will retain its beautiful color on the inside.
As a nice complement to the taste of the salmon, you can prepare sweet potato puree in advance, which you can mash with a fork and serve on a plate as a base.
For two servings you need two pieces of salmon and two pieces of medium-sized sweet potatoes.
Preparation of sweet potato puree
Start by preparing the puree because it will take you about twenty minutes, and while the potatoes are baking you can prepare the salmon fillets.
Peel and cut sweet potatoes into small cubes and add them in a baking pan. Add olive oil and spices to taste (pepper, garlic powder, cumin, salt). Mix them well so they absorb the spices and transfer them in a heated oven at 180 degrees. Stir them once during baking so that they caramelize better. The required baking time is about twenty minutes, until they soften nicely.
Set them aside while you prepare the salmon.
Before serving, mash them with a fork into smooth pure or you can leave some pieces unmashed to look more rustic and serve them on a plate as a base.
Salmon Preparation
Before baking, coat the salmon filets with a mixture of olive oil, lemon juice, pepper, chopped garlic, dill and sea salt.
Let it absorb the flavors while the potatoes are baking.
Bake the Salmon from 10 to 12 minutes, depending of the thickness of the filets.
Serve it on top of the mashed puree, with a slice of lemon.
You add few pieces of grilled asparagus as a side dish.
