The Italian Savoiardi biscuits, known as Lady Fingers, are tender and airy with a sweet and crispy crust, and homemade ones are definitely the best choice for an authentic taste that cannot be compared to store-bought ones.

This biscuit softens quickly and is great for dipping into coffee, pudding, and is especially perfect to use in Tiramisu.

The whites are beaten separately from the yolks and the flour is added, then transferred in piping bag biscuits are shaped in the form of long fingersfrom the mixture.

Before baking, they are sprinkled twice with powdered sugar to have a characteristic crust and are baked for 15 minutes in a heated oven. After cooling, they tend to harden, becoming lighter and crispier in consistency.

Preparation

Use eggs at room temperature. Separate the yolks from the whites and start by beating the egg whites with a hand mixer until you get a white foam,Then add a third of the granulated sugar. Add the sugar on three times to get a smooth and beautiful meringue. Beat the whites for about 5 minutes, until you get a nice meringue that has peaks.
Then add the egg yolks to the whites and beat very briefly, few seconds, just to smooth the mixture.
Then add the cake flour to this mixture, sift it and mix with a spatula to make it equal texture.
At the end, you can add vanilla extract if you want a nice vanilla aroma on the biscuit.
Transfer the mixture to a piping bag and cut off the top with a thickness of 1 cm.
Cover the pan with a baking paper and use the bag to form finger-length biscuits.
Finally, sprinkle every buiscuit with powdered sugar twice.
Bake them in a heated oven at 170 degrees for 15 minutes.
After they cool, they will harden. You can store them at room temperature.
