These healthy cookies are made with a creamy avocado base, combined with peanut butter, dates, cocoa powder, and dark chocolate. Perfect for any time of day:

🛒 Ingredients (~12 cookies)
- 1 ripe avocado
- 1/2 cup peanut butter (natural, unsweetened if possible)
- 1 cup pitted dates
- 2 tbsp cocoa powder
- 1/4 cup dark chocolate, chopped (plus extra for topping if desired)
- 1 tsp vanilla extract (optional)
- Pinch of salt

👩🍳 Instructions
- Preheat oven: Set to 180°C (350°F) and line a baking tray with parchment paper.
- Blend ingredients: In a blender or food processor, combine avocado, peanut butter, dates, cocoa powder, vanilla, and salt. Blend until smooth.
- Add chocolate: Stir in the chopped dark chocolate.
- Form cookies: Use a spoon to place small mounds of dough on the tray and flatten slightly.
- Bake: 15 minutes, until the edges are firm.
- Cool: Let the cookies sit on the tray for 5 minutes, then transfer to a wire rack to cool completely.
