This burrata salad was inspired by my last visit to Abu Dhabi, starting from the way it was served that amazed me, to the combination of fruit with green salads, the flavors and the colorfulness, more reasons to be on the top of the best sellers in the restaurant where I have tried.
 I am happy to share it in the season of fresh raspberry and cherry tomatoes. Optionally, you can use a mix of green salads, and the more color you have, the better.
The burrata cheese, which consists of mozzarella cheese on the outside and is filled with stracciatella on the inside, perfectly enriches this salad, while the toasted buns in a pan coated with oil make it a real crunchy delight.
Burrata cheese is cow’s cheese that taste milky, rich and buttery with a suitable, creamy sweetness and is perfect for this salad.
It is good source of protein and calcium, high in fat and calories, so it should be consumed in moderation as part of balanced diet.
It is best to serve on room temperature, after you drain from the water before serving.
Ingredients for 2 persons
250 grams of green mediterranean mix (as much colorful as better)
80 grams of cherry tomatoes (halves)
50 grams of fresh raspberries
1/2 mango (thinly sliced)
1 Burrata Cheese
4 slices of toasted bread 
For the dressing
2 tsp of balsamic vinegar
2 tsp olive oil
2 tsp lemon juice
4 mashed fresh raspberries
Wash the green leaves and raspberries under running cold water, use fresh raspberries. Cut the cherry tomatoes in half and the mango into thin pieces lengthwise.
Prepare a large serving plate. First, spread the green salad on the bottom and optionally spread the chopped fruit on top of it.
Finally, add the burrata cheese in the middle.
Prepare the dressing and sprinkle. You can mash the raspberries with a fork and add the other ingredients.
Mix and pour over the dressing evenly.
Toast the bread pieces quick before serving and serve them still hot for more crunchiness.
It is best to use a baguette and cut it into thin slices.
Add olive oil, a little salt and pepper to each piece on both sides and fry them briefly in a pan until they get a golden brown color and become crispy.
Cut the burrata in half with a knife or simply open it with your hands.
You can dip piece of toasted bread in the burrata cheese, or spread it some cheese on a baguettes, the choice is yours.
You can enjoy the flavors as you prefers.
