Directions

This rustic cake has an uneven, cobblestone-like surface and the comforting taste of an old-fashioned homemade dessert. Served warm with a scoop of vanilla ice cream, it becomes an irresistible hot–cold treat.
All you need are a few simple ingredients and fresh, seasonal wild blackberries.
(Use a 250 ml cup as a measuring cup.)
Ingredients
Dry ingredients
- 1 cup all-purpose flour
- ¼ cup brown sugar
- ¼ cup granulated sugar
- 1 tsp salt
- 2 tsp baking powder
Wet ingredients
- 1 egg
- ½ cup milk
- 1 tsp vanilla extract
Plus
- 120 g butter, melted
- Fresh blackberries

Preparation
- In a bowl, whisk together all the dry ingredients.
- Add the egg, milk, and vanilla extract. Mix until smooth.
The batter should be slightly thicker than pancake batter. - Pour the melted butter into a baking pan.
- Pour the batter over the butter and gently swirl with a spatula to create a marble effect.
- Scatter fresh blackberries evenly over the surface.
Baking
- Bake at 200°C for 40 minutes.
- After 30 minutes, sprinkle a little brown and white sugar on top and return to the oven for the final 10 minutes.
- Check the center before removing from the oven.
Serving Suggestion
Serve a warm slice with:
- A scoop of vanilla ice cream
- Fresh mint leaves for a refreshing finish
