Ingredients (for 2 servings)
- 150–200 grams grilled chicken, chopped
- 50 grams cottage cheese/ricotta cheese
- 1 small boiled beetroot, finely chopped (optional)
- 2–3 tablespoons low-fat sour cream or Greek yogurt (2% fat)
- 1–2 tablespoons walnuts, roughly chopped
- 1 tablespoon toasted sesame seeds
- Salt and pepper to taste

Instructions
- Chop the grilled chicken into small cubes or strips.
- Mix the chicken with cottage/ricotta cheese in a bowl.
- If you want a vibrant purple salad, add the chopped beetroot; for a “white” version, skip the beetroot.
- Add walnuts and toasted sesame seeds for texture and healthy fats.
- Combine with sour cream or Greek yogurt, season with salt and pepper.
- Serve immediately or chill briefly for an extra fresh taste.

Tips:
- Add a squeeze of lemon juice for extra freshness.
- You can make two different versions of the salad: one purple with beetroot, and one white without it—both equally healthy and delicious.
- For higher protein content, use more chicken or ricotta.
