The Moist Apple Cake is a classic homemade dessert that brings warmth, the aroma of cinnamon, and the taste of childhood. Soft, flavorful, and filled with juicy apple pieces, this cake is perfect for everyday enjoyment, family moments, and a cozy bite with a cup of coffee or tea. Easy to prepare and always a hit – a recipe that will leave everyone asking for another slice.
Ingredients
Dry ingredients
- ½ cup ground walnuts (60 g)
- ½ cup coarsely chopped walnuts (60 g)
- 1 cup spelt / oat / whole wheat flour (120–130 g)
- ⅓ cup coconut sugar (50–55 g) or 2–3 tbsp honey / maple syrup
- 1½ tsp baking powder
- 1 packet vanilla or ½ tsp extract
- pinch of salt
- 1–2 tsp cinnamon
- ½ tsp ground ginger (optional)
Apples & liquids
- 4 large apples (800 g), grated with peel
- 80 g melted coconut oil (⅓–½ cup)
- 1 tbsp apple cider vinegar
For final layer
- 50 g melted coconut oil ( or you can use butter cubes)
Optional
- 1–2 tbsp oat flakes for a crunchy topping
- 80 chopped walnuts for sprinkling over two layers
Preparation
- Mix dry ingredients: flour, ground walnuts, baking powder, salt, cinnamon, ginger, vanilla, and sugar.
- Grate apples with peel, add vinegar, and stir briefly. Do not drain – the juice keeps the mixture moist.
- Grease a 30×20 cm pan with a little coconut oil.
- Layer ingredients: ⅓ of dry mixture, ½ of grated apples, ⅓ of dry mixture, ½ of coarsely chopped walnuts, remaining apples, and finish with the last layer of dry ingredients.
- Drizzle with melted coconut oil and sprinkle with remaining walnuts (and oat flakes if desired).
- Bake in preheated oven at 180°C / 356°F for 40–45 minutes, until golden brown.
- Cool 10–15 minutes before slicing. Optionally, sprinkle with coconut flakes or drizzle with honey.
