Pita breads with a sour taste reminiscent of sourdough are a great option to fill with a filling of your choice or to dip.
They are baked in the oven, forming pockets inside, airy and soft at the same time.
You can prepare and use them with various recipes, store them in the fridge, or freeze them.
They are much tastier than store-bought, without preservatives or additives.
Ingredients:
- 470 g flour
- 270 ml lukewarm water
- 240 ml yogurt
- 3 tbsp olive oil
- 1 package dry yeast
- 1 1/2 tsp salt
- 1 tsp sugar
Preparation and rising of the dough:
- Add 1 tsp sugar to lukewarm water and add dry yeast. After 5 minutes, when the yeast is activated, add yogurt and olive oil.
- Add 1 tsp salt to the flour, mix, and gradually add the dry ingredients to the liquids. Knead with a mixer about 10 minutes or by hand until soft.
- Transfer the dough to an oiled bowl, cover with plastic wrap, and let it double in size (about 45 minutes to 1 hour).
Shaping the pita breads:
- Transfer the dough to a floured surface and divide into 12 equal pieces.
- Shape each piece into a ball by tucking the edges inward. Cover with foil and let rise and soften for another 20 minutes.
- Roll out the balls to about 3 mm thickness on a floured surface.

Baking:
- Preheat oven to 200°C.
- Bake the pitas 5–8 minutes until pockets form and they turn slightly golden. Turn them if necessary.
- Cover with plastic wrap to keep them soft.
Fill them with meat, salads, eggs, or use for dipping hummus.
