(Easy, aromatic & perfect with coffee)
If you are a lover of coffee-enriched fillings, this cake with a rich walnut flavor will surely win you over.
Soft sponge cake layers paired with a literally silky coffee frosting make this dessert irresistible — especially when enjoyed with a cup of coffee after lunch.
This cake is quick and easy to prepare using simple ingredients we all usually have at home, which makes it a frequent choice in my kitchen and perfect for unexpected guests.
One of the reasons I love this cake, besides its taste, is that it can be frozen. You can slice it as needed and enjoy it as a cold dessert — the sponge thaws quickly and tastes wonderfully refreshing when chilled.
Dough Ingredients
- 4 eggs
- 70 ml whole milk
- 50 ml sunflower oil
- 120 g cake flour
- 20 g coffee
- 1 tbsp vanilla extract
- 10 g baking powder
- 130 g granulated sugar
- A pinch of salt
- 50 g chopped walnuts (optional, can be ground)
Dough Preparation
- Separate the egg whites from the yolks and add a pinch of salt to the whites.
- Beat briefly, then add the sugar in three stages until fluffy.
- Add the egg yolks one by one and mix well.
- Add milk, oil, and vanilla extract.
- Sift together flour, baking powder, and coffee, then add to the mixture.
- Fold in the walnuts gently using a spatula.
Grease and flour a baking pan (26 cm) or line it with baking paper. Pour in the batter and bake at 170°C (340°F) for 25 minutes.
Check with a toothpick and allow the cake to cool before frosting.
Coffee Frosting Ingredients
- 2 egg yolks
- 90 g sugar
- 60 ml brewed instant coffee (cooled)
- 1 tsp cornstarch
- 80 g butter (room temperature)
- 1 tbsp vanilla extract
- 100 g chopped walnuts for decoration
Frosting Preparation
- Briefly beat the egg yolks with sugar.
- Add 2 tablespoons of coffee, then the cornstarch and remaining coffee.
- Cook the mixture over steam for 5 minutes, then cool.
- Beat the butter until fluffy, then gradually add the cooled coffee cream.
- Beat until smooth, silky, and aromatic.
Spread the frosting over the cake and sprinkle with chopped walnuts.
