Basque Burnt Cheesecake or known as San Sebastian Cheesecake is super easy and super creamy healthy recipe, gluten free.

Preheat your oven to 230 C (450 F) before mixing ingredients (Upper and Lower).
All ingredients need to be room temperature or at least 45 minutes before start cooking. Mix the sugar, cream cheese, salt and vanilla sugar with hand mixer.

Add the eggs one by one until is fluffy and incorporated.
In the end add rice flour and whisk until fully mixed.
Bake 60-65 minutes and set it cools down before serving.

Decorate with fruits or as you prefer.
Serving can be with dark chocolate or mix of fresh season fruit with melted white chocolate and heavy cream.
This Cheesecake can last up to 5 days in the fridge.
