I suggest to prepare an old-fashioned cake in a very quick and simple way from a few ingredients that we all have in the kitchen. The cake has a soft structure, the inside is crunchy from the poppy seeds, and is an excellent pleasure with tea or coffee. You can serve it with marmalade or blue plum jam, because these two flavors complement each other perfectly, and one piece will be a real treat.
Ingredients
2 eggs (large)
1 cup of milk
1 cup of poppy seeds
2 cups all-purpose flour
1 cup of oil sunflower (grape seeds)
1 cup granulated sugar
10 grams of baking soda
10 grams of vanillin sugar/or vanilla extract 2 tbsp
zest of one lemon
The measure for a cup is 250 ml
Preparation
Prepare the baking mold, coat it with oil and flour it. You can use a mold with the shape of your choice.
In a bowl, add the eggs, sugar, vanilla sugar and beat until the sugar melts and until you get a nice fluffy consistency.
Then add the milk gradually while mixing, then the oil. Add the baking powder to the flour, mix until combine, then add the poppy seeds to them, mix, and add dry ingredients to the bowl with the liquid ingredients. Finally, grate zest of one lemon and add it to the prepared mixture. Mix well to have a nice and even dough. Transfer the mixture to the baking pan.
Bake in a heated oven at 190 degrees for about 20-25 minutes. Check with a toothpick whether the inside is nicely baked, if the dough sticks to the toothpick, bake it for another ten minutes. Once baked, cover the cake with a towel and let it rest for a few minutes before removing it from the pan. If you have a cracked part, cut it with a knife so that it is flat and turn the bottom part to be the top part. After it cools down, sprinkle it with powdered sugar. Cut into slices, garnish with a mint leaf and serve with marmalade or prune jam. The cake is delicious on its own, and even serving it with just powdered sugar with tea will be a real treat.
