A delicious and soft aromatic dark rum cake made of boiled chestnuts.
This healthy cake is prepared quickly and easily in a few minutes. It is ideal for winter days, and also also perfect one for the Christmas table.
If you are a lover of rum and chocolate, then you can enrich the taste of the chestnuts with the wonderful aroma and flavor of dark rum, and the natural mildness of the boiled chestnuts can be perfectly dipped in melted chocolate. Depending on the mold you will use, you can make a double dose if you use a larger mold. It is enough to boil half a kilo of chestnuts beforehand and clean them well. Half an hour of cooking is quite enough for them to soften nicely so you can clean them easily. Take out the inner part and use both smaller and larger pieces that you will feel in each bite. Set aside a few tablespoons of the cleaned chestnuts for decoration at the end. If you don’t like chocolate, you can just sprinkle powdered sugar on the cake after it cools down

Ingredients
- for dough
250 grams of boiled and cleaned chestnuts in pieces
100 grams of cake flour
3 eggs
50 grams of butter
2 tablespoons of brown sugar
1 tablespoon granulated sugar
10 grams baking powder
- For the chestnuts
250 grams cleaned chestnuts
2 spoons of honey
1 tablespoon of brown sugar
1/2 tbs cinnamon
2 tablespoons dark rum
100 grams of melted chocolate for decoration
Preparation
First prepare the cleaned chestnuts into pieces.
Into 250 grams of chopped chestnuts, add 2 tablespoons of honey, 1 tablespoon of brown sugar, 1/2 teaspoon of cinnamon and 2 tablespoons of dark rum for a nice aroma and taste of the cake.
Mix all the ingredients well, you will get a puree-like mixture and keep them aside and prepare the cake batter.
Place 3 large eggs at room temperature in a bowl and add 1 tablespoon of granulated sugar and 2 tablespoons of brown sugar to them. Beat them with a hand mixer for a few minutes until the volume increases nicely. Then add 50 grams of melted butter and beat again briefly for one minute. You will get a shiny and smooth mixture. Then add 100 grams of sifted cake flour and 10 grams baking powder and beat with a mixer until the dry and liquid ingredients are combined. At the end, add the sweetened chestnuts and beat the mixture with the mixer until all combine.Transfer the mixture to the mold of your choice. Previously, coat the mold well with butter and sprinkle it with flour.
Bake in a heated oven at 160 degrees for 30 to 40 minutes. Check the inside with a toothpick.
Allow the cake to cool slightly and transfer it to a serving plate.
Optionally, you can decorate it with powdered sugar or with melted chocolate and pieces of chestnut.
