🍫 Rosehip Jam Cake

This cake is created as a fusion of traditional homemade flavor and a modern, luxurious chocolate note.

Rosehip jam brings fruity depth with a gentle tartness, while orange zest adds a fresh and warm aroma.

🍫 Ingredients

 

Wet base:

  • 1.5 cups rosehip jam (if thick, dilute with a little water)
  • 1/2 cup sunflower oil
  • 1 tsp vanilla extract

Dry ingredients:

  • 2 cups flour
  • 2 tbsp cocoa powder
  • 1 tsp baking soda
  • a pinch of salt

Flavor & texture:

  • 1 tsp grated orange zest
  • 2 tbsp chopped walnuts
  • 50 g chopped dark chocolate

🍫 Decoration

  • 100 g dark chocolate
  • 1 tbsp butter
  • 1 tbsp chopped walnuts
  • rosehip jam for decoration

👩‍🍳 Instructions

  1. Mix all dry ingredients: flour, cocoa powder, baking soda, and salt.
  2. In another bowl, combine rosehip jam, oil, and vanilla until smooth. Add orange zest.
  3. Gradually add the dry ingredients into the wet mixture, mixing only until combined.
  4. Fold in walnuts and dark chocolate gently.
  5. Pour the batter into a rectangular baking pan lined with baking paper (20 × 30 cm).
  6. Bake at 180°C (350°F) for about 23–27 minutes. Check with a toothpick — it should come out with a few moist crumbs, not dry, but not wet either.

🍫 Decoration & Serving

Melt the chocolate with butter and pour it over the cake while still warm. Decorate with walnuts.

Let it cool completely, then cut into squares. Before serving, decorate with a touch of rosehip jam.


💡 Note

Store-bought rosehip jam can also be used. If it is very thick or has a gelatin-like texture, it is recommended to dilute it slightly.

Use a 250 ml cup as a measurement to ensure the cake has good volume and balance.
