Ingredients
For the pancakes
- 2 egg whites
- 1 scoop protein powder (~30 g)
- 2 tbsp pumpkin puree
For the filling
- 2 tbsp pumpkin puree
- 2–3 tbsp Greek yogurt (2% fat)
- ½ tsp cinnamon
For decoration
- Baked pumpkin pieces
- Cinnamon
Instructions
- Mix the egg whites, protein powder, and pumpkin puree until smooth.
- Heat a pan over medium heat and cook the pancakes on both sides until golden.
- Prepare the filling: mix pumpkin puree, Greek yogurt, and cinnamon.
- Fill the pancakes with the mixture and fold or stack them.
- Decorate with baked pumpkin pieces and a sprinkle of cinnamon.
