Dough Ingredients
- 4 large eggs
- 200 g all-purpose flour
- 200 ml sunflower oil
- 110 g granulated sugar
- 8 g baking powder
- ½ tsp salt
- 2 tbsp vanilla extract
- Zest of 2 lemons

Topping Ingredients
- ½ cup powdered sugar (150 g)
- 5 tbsp fresh lemon juice
- 2 tbsp milk
Decoration
- Lemon slices
- Fresh mint leaves
Preparation
- Beat the eggs briefly with a whisk. Add sugar, oil, and vanilla extract and mix until smooth.
- Add dry ingredients, grated lemon zest, and beat until a light yellow, caramel-colored batter forms.

- Pour the batter into a greased and lightly floured pan of your choice. Bake at 150°C (300°F) for 45 minutes. Check with a toothpick in the center — it should come out clean.
- As soon as the cake is out of the oven, pierce it with a toothpick and pour the topping over while it’s still warm. This step enhances aroma and juiciness.
- Decorate with lemon slices and fresh mint.

- Let the cake rest before slicing. Store in the refrigerator wrapped in plastic wrap — the longer it stays, the more flavorful and aromatic it becomes.
