This lemon cake, drizzled with fresh lemon juice, has a delightfully sour and refreshing taste.

Dough Ingredients

  • 4 large eggs
  • 200 g all-purpose flour
  • 200 ml sunflower oil
  • 110 g granulated sugar
  • 8 g baking powder
  • ½ tsp salt
  • 2 tbsp vanilla extract
  • Zest of 2 lemons

Topping Ingredients

  • ½ cup powdered sugar (150 g)
  • 5 tbsp fresh lemon juice
  • 2 tbsp milk

Decoration

  • Lemon slices
  • Fresh mint leaves

Preparation

  1. Beat the eggs briefly with a whisk. Add sugar, oil, and vanilla extract and mix until smooth.
  2. Add dry ingredients, grated lemon zest, and beat until a light yellow, caramel-colored batter forms.
  3. Pour the batter into a greased and lightly floured pan of your choice. Bake at 150°C (300°F) for 45 minutes. Check with a toothpick in the center — it should come out clean.
  4. As soon as the cake is out of the oven, pierce it with a toothpick and pour the topping over while it’s still warm. This step enhances aroma and juiciness.
  5. Decorate with lemon slices and fresh mint.
  6. Let the cake rest before slicing. Store in the refrigerator wrapped in plastic wrap — the longer it stays, the more flavorful and aromatic it becomes.
