A delicious and unique watermelon rind sweets, prepared in a simple way without changing waters and mess in the kitchen.
Prepare the syrup from water and sugar and let it boil to a nice thickness, with just a few stirrings and without taking a lot of time and effort, I assure you that you will prepare a sweet that can last throughout per year and longer.
The uniqueness of this recipe comes from the peppercorns (red or black), chili powder and the poppy seeds.
When preparing this sweet, it will be best to use a watermelon with a thicker skin. Watermelon season is still going on, so I highly recommend that you don’t throw away the rind and make this really delicious vanilla-scented treat.
Peel the watermelon skin, cut it into small cubes, and prepare the syrup. Then add the chopped watermelon rind to it. With a few stirrings while boiling, you will get a wonderful sweet pleasure.
Ingredients and preparation
700 grams of finely chopped watermelon rind
500 grams of sugar
250 ml of water
Juice of 1/2 lemon
10 grams Vanillin sugar
2 tbsp of poppy seeds
1 tsp of chili powder
1/2 tsp red peppercorns
2-3 fresh fenel leaves
Bring the sugar and water to a boil, stirring occasionally until the liquid clears. Then add vanilla sugar, chili powder and peppercorns. Let all the ingredients boil for about two minutes, then remove the peppercorns and add the chopped watermelon rind.
At a medium temperature let the sweet to boil for 50 minutes. Somewhere in the middle, after it start to boil, or after half an hour, add juice from half a lemon and two tablespoons of poppy seeds. Stir occasionally to evenly boil all the pieces, or 4 to 5 stirs are enough until it is finished completely. At the end, add few fresh fenel leaves and let them to boil for a few more minutes. Allow it to cool completely and transfer to a sterile jars.
You can prepare sterile jars in 10 minutes while the watermelon is boiling.
Place nicely washed jars with their lids in the oven at 100 degrees and leave them for ten to fifteen minutes. Be careful not to let the jars touch each other to prevent them from bursting. Then turn off the oven and let them cool.
Fill the jars with the prepared sweet watermelon rind and close.
