Directions
“Macedonian Taratur” is a healthy refreshing summer salad that my grand mother and my mother was preparing usually from sour milk in hot summer day’s as salad that we consume it with slice of toasted bread.
Combination of fresh herbs, fresh cucumber and mashed garlic cloves immediately refreshes the body and give coldness feeling when summer temperature is above 30 and 40 degrees.
Ingredients
1 cucumber (cubes)
500 ml sour milk (ship or cow)
2 garlic cloves (mashed)
50 grams walnuts (chopped)
pinch of sea salt
fresh parsley and basil leaves
Preparation
Clean one fresh cucumber and cut into small nicely cubes.
In plate add two garlic cloves and pinch of sea salt and mash it. Then add fresh parsley and fresh basil leaves and mash it until they release juices and all flavors to combine.
Mix the sour milk with wire whisk until smooth, then add it to the other ingredients, finish with chopped walnuts, mix until all combine. Serve with toasted piece of bred or consume as evening salad or at any other time of the day.
