Directions
For all sweet potato lovers, I suggest you a delicious salad with roasted sweet potato flavored with fruit, arugula and soft cheese, topped with a lovely dressing that will combine all the flavors together until irresistible.
Ingredients
2 pieces of sweet potato
1 green apple (golden delishes)
100 grams of soft white cheese (white Danish or feta cheese)
1 kiwi
arugula
cumin
salt
olive oil
For dressing
1 tbsp of olive oil
1/2 tablespoon ground cumin
1 tbsp of apple cider vinegar
1 tbsp of honey
Preparation
Finely chop the sweet potato into small cubes, add a little salt, and 2 tbsp cumin. Add 2 tablespoons of olive oil, mix well to coat all the pieces with oil and cumin and transfer them to the baking pan. Bake at 180 degrees for 20 to 30 minutes depending on the size of the pieces. During baking, you can mix them once and return them back for a nicer taste. Take them out when pieces soften nicely. Cut the kiwi into small cubes, one green apple into quarters and then each quarter into thin strips. Cut the cheese into cubes.
Serve on a wooden board. Add the arugula to the bottom, spread the cubed sweet potato, the kiwi pieces and the cubed cheese on top of it. Drizzle with the dressing and enjoy the flavors.
