 Soft traditional cookies with toasted almonds that simply melts in your mouth.

Irresistible delicious with crunchiness in every bite and amazing aroma of vanilla, perfect in the morning with tea or coffee.

By original recipe of my grand mother this cookies called “Gurabii” are perfect for Christmas and New Years Holidays.

In this recipe im using butter instead of lard, but if you like you can use same amount of lard. From time to time im preparing this cookies with lard in loving memories of my grand mother, but choice is yours.

 

For shaping you need mold or you can use small cup if you like to get half moon shape.

Easy preparation and from one dose you will have two pans of  cookies for many guests.

Preparation

Prepare powdered sugar for the cookies so when you will get them from the oven you need to add them until they are still warm. Im preparing my own powdered sugar at home from grounded sugar and always start with his preparation, but if you have powered it will be easier for you.
Also you can prepare roasted almonds in the beginning. Chop them nicely into smaller pieces and roasted in pan on low medium heat for few minutes. They will give more crunchiness. Im using 100 grams, but if you like you can add more.
Start with mixing butter on the room temperature. Need to be softened for easy mixing with the mixer. When is soft enough, after two minutes, you can add oil, mineral water, vanilla extract and powdered sugar.
Mix all ingredients until combine well. Then start with adding the flour.
Important thing is flour to be added gradually, with spoon, not whole at ones.
Be careful, and please don't add more than 700 grams of flour.
In the end when all ingredients are combine, add chopped toasted almonds if you like crunchiness and mix again with mixer for one minute. If you like more smooth cookies you can leave them without almonds. When you will finish dough will be soft, and easy for shaping.
On floured surface separate from dough with hands small pieces and shape two or tree cookies. You can use mold or small cup if you like original moon shape.
The dough should be thin with a thickness of 5 to 7 mm.
As you shape cookies you can add one by one into a pan on baking paper.
While first one is baking, you can prepare cookies for the second one pan.

Baking

Baking need to be on already heated oven on 200 celsius, from both sides.
Baking time of 15 minutes is enough, until they start to smell nicely.
Be careful not to burn them, it is enough if they darken a little.
After you take them from the oven, until cookies are still warm add one by one in powdered sugar from each side.
You can keep this cookies in closed container many days on room temperature.
